Fluffy vegan Pancake recipe

I’ve always loved pancakes more than anything! As a kid, I liked them best sweet and with apples.
The traditional pancakes, also called "Eierkuchen" in Germany, are made with eggs and cow’s milk.
But since I’ve been eating mostly plant-based for years, I’ve created the perfect pancake recipe over time!
This recipe is vegan, sugar-free, soy-free, and oil-free.
So it's also a perfect recipe, when you follow the starch solution or blue zone diet.

By the way, kids love this recipe, maybe because it’s so simple and so delicios.
And because I don’t like reading long paragraphs about ingredients on other blogs, let's get straight to the recipe.

Ingredients for around 10 Pancakes:
100 g flour (whole wheat flour, spelt flour, or wheat flour)
1 banana
90 ml plant-based milk (oat milk, almond milk, etc.)
30 ml coconut milk
1 big spoon of sweetener (honey, maple syrup, coconut sugar, etc.)
Instructions:
1. Prepare the banana
Take a ripe banana and mash it with a fork until it’s soft and well mashed.
2. Add the other ingredients
Next, add the flour, plant-based milk, coconut milk, and honey.
3. Mix the batter
Stir everything well until you get a smooth batter. It should be slightly thick. If it’s too runny, add a little more flour.
4. Prepare the pan
Use a non-stick pan so you don’t need oil. If you don’t have one, lightly coat the pan with a thin layer of coconut oil.
5. Heat the pan
Preheat the pan until it’s properly hot. If you add the batter too early, it will stick.
6. Cook the pancakes
Spoon 1-2 tablespoons of batter into the pan for each pancake. I usually fit 3-4 pancakes in one pan. Cook them on both sides until golden brown.
7. Prepare the topping (optional)
For extra flavor, sprinkle some apple slices, pear slices, or other fruit with cinnamon.
Then, heat them in the microwave for about 1 minute.
Also good is a small spoon of almond butter or peanut butter on top.
8. Bonus: Blueberry Pancakes
During blueberry season, I love adding fresh blueberries to the batter. After spooning the batter into the pan, simply drop some blueberries on top. Then, cook the pancakes until they are golden brown on both sides. Absolutely delicious!
