To be honest, I love something sweet in the afternoon.

Waffles are a classic in our house because everyone loves them.

These waffles are easy to do, vegan, soy-free, sugar-free, oil-free, and simply delicious with a strawberry or raspberry sauce.

Kids also love this waffles ;-)

And since I don’t like long introductions for a recipe, let’s jump right in:

Healthy vegan, oil free waffle with strawberry sauce
Healthy vegan, oil free waffle

Ingredients for the batter:

  • 250g flour

  • 350g plant-based milk of your choice

  • 100g soaked dates

  • 100g soaked cashews

  • ½ packet of baking powder

  • A pinch of salt

  • 1 teaspoon vanilla extract

Ingredients for the strawberry sauce:

  • 200g (frozen) strawberries

  • A little water

  • A little flour

Recipe:

As always, I just throw all the ingredients together and mix them.

Before I start mixing everything, I usually turn on the waffle iron.

I use a non-stick waffle maker/sandwich maker, so I don’t need to grease it.

But if your waffles stick too much, I recommend lightly brushing it with a little coconut oil.

Then, bake the waffles in your waffle iron.

For the strawberry sauce, I always use frozen fruit since they’re frozen while fresh, and strawberry season doesn’t last long anyway.

Just put the strawberries in a small pot, add a little water, and slowly heat them up on medium heat.

Once the strawberries are soft, you can add a little flour with a whisk to thicken the sauce.

We don’t add any sugar (alternatives) or syrup, but feel free to add some to taste if you like.

That’s it!

Delicious, healthy, and by the way also nice for breakfast. Feel free to check out my other recipes and leave a comment if you like this one.

Yours,Lisa
